Baked Sweet Plantains
Yield: Makes about 2 servings
Ingredients:
2 very ripe Plantains
2 tbsp Avocado or Coconut Oil
Optional: Coconut sugar (for a little crust)
Instructions:
Preheat your oven to 400°F.
Peel the plantains and slice them into ¼ inch thick pieces.
Place the sliced plantains in a bowl, drizzle with oil, and toss gently to coat. If you want them to have a slight crust, you can sprinkle with a little coconut sugar.
Arrange the plantain slices in a single layer on a baking sheet.
Place the baking sheet on the middle rack of your preheated oven.
Bake for 15 minutes. After 15 minutes, carefully flip the plantains with a pair of tongs.
Bake for an additional 10 minutes, or until you’re happy with the level of caramelization on both sides.
Enjoy them fresh and hot!
These plantains are crispy on the outside and soft and sweet on the inside—perfect to pair with Pollo a la Plancha, beans, and of course, cilantro sauce!
